Every Sunday I will be posting food recipes and today I decided to make a cucumber mint gazpacho.
1/2 of an avocado
2 baby cucumbers, chopped
Juice from 1/4 of a lemon
2 cloves of garlic, crushed
Small bunch of mint
1 small container of greek yogurt
Small bunch of parsley
A couple slices of a small onion
pinch of salt and pepper
1 piece of parsley for garnish
A drop of olive oil to garnish
In a food processor or blender, blend together 1/2 of an avocado, 2 baby cucumbers chopped, 2 cloves of garlic crushed, onion, and add 1 small container of greek yogurt. Then add, juice from 1/4 of a lemon, mint, parsley, salt and pepper to taste. Blend, Blend, Blend.
Refrigerate until cold, about 2-3 hours. Pour the mixture into shot glasses, or whatever glass you prefer using. Garnish with a drop of Olive oil, few pieces of salt, and 1 piece of parsley. Enjoy!
